Ten guests will be welcomed aboard Fingal for an extraordinary evening as acclaimed chef Darin Campbell takes the helm at The Captain’s Table, creating a bespoke tasting menu crafted exclusively for this one‑night‑only experience.

With over 30 years at the forefront of British gastronomy, Darin has led some of the UK’s most celebrated kitchens. His career includes serving as Head Chef at the 2‑star Michelin restaurant Andrew Fairlie at Gleneagles, earning his own Michelin star at Ballachulish House Hotel, and holding the role of Executive Head Chef at Sir Andy and Kim Murray’s Cromlix. His early training took him to London’s finest dining rooms, including Petrus under Gordon Ramsay and The Capital Hotel in Knightsbridge.

Darin has cooked for heads of state at the Royal Banquet for the 2005 G8 Summit and spent nine years working alongside the legendary Albert Roux MBE. Known for his passion for learning new cuisines, his commitment to guest satisfaction, and his belief in the power of a positive, collaborative kitchen, Darin brings a rare combination of precision, creativity and warmth to every plate.

Take your seat in The Bridge, our former command room transformed into an intimate private dining space where refined cuisine meets the atmospheric charm of Fingal. It’s an evening reserved for those who seek the exceptional.

Served around one large communal table, Darin’s set menu will be delivered in partnership with Fingal’s Head Chef, Pedro Barreira. Guests will be welcomed with canapés and a whisky cocktail, followed by perfectly paired wines with each course.
